With jasmine rice, golden beets, watermelon and feta cheese, this vegetarian salad makes a hearty summertime main.
Step 1
Prepare rice according to package directions. Allow it to cool completely.
Step 2
Whisk together olive oil, lemon juice, Greek seasoning, salt and pepper in a medium bowl.

Add rice to bowl with dressing and stir to combine. Let stand for 5 minutes.
Step 4
Transfer rice to a serving platter. Lay beet slices and watermelon slices across the top of the rice. Top with feta, olives, red onion and mint. Garnish with pistachios.
