Greek Beet and Watermelon Rice Salad

Ingredients

  • 1 bag Success® Jasmine Rice
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tsp Greek seasoning
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 cup golden beets, thinly sliced, cooked
  • 1 cup watermelon, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup black olives, pitted and halved
  • 1/4 cup red onion, thinly sliced
  • 1 tbsp fresh mint, thinly sliced
  • 2 tbsp pistachios, toasted and chopped

Instructions

  • With jasmine rice, golden beets, watermelon and feta cheese, this vegetarian salad makes a hearty summertime main.

    Step 1

    Prepare rice according to package directions. Allow it to cool completely.

    Step 2

    Whisk together olive oil, lemon juice, Greek seasoning, salt and pepper in a medium bowl. 

    Step 3

    Add rice to bowl with dressing and stir to combine. Let stand for 5 minutes.

    Step 4

    Transfer rice to a serving platter. Lay beet slices and watermelon slices across the top of the rice. Top with feta, olives, red onion and mint. Garnish with pistachios.
