Greek Beet and Watermelon Rice Salad

Ingredients

  • 1 bag Success® Jasmine Rice
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 cup thinly sliced, cooked golden beets
  • 1 cup thinly sliced watermelon
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup pitted black olives, halved
  • 1/4 cup red onion, thinly sliced
  • 1 tbsp fresh mint, thinly sliced
  • 2 tbsp walnuts, toasted and chopped

Instructions

  • This fresh summer salad is a great addition to any meal or outdoor barbecue. Tossed with aromatic and fluffy Success® Jasmine Rice it’s hearty, filling and sure to impress.

    Step 1

  • Prepare rice according to package directions. Allow to cool completely.

    Step 2

  • Whisk together oil, lemon juice, salt and pepper in a medium bowl.

    Step3

  • Add rice to bowl with dressing and stir to combine. Let stand for 5 minutes.

    Step 4

  • Transfer rice to a serving platter. Lay beet slices down one side of rice. Lay watermelon slices down opposite side. Top with feta, olives, red onion and mint. Garnish with walnuts.

    Recipe Tips

    Substitute capers for olives, if preferred.

    To diminish the “raw” flavor of onions, soak them in ice water for at least 5 minutes before using them in your recipe.

    Feel free to use roasted, boiled, steamed or grilled beets in this recipe.
