These fun beef, bean and Success® Brown Rice tacos are great for a weeknight taco dinner with friends or family!
Prepare rice according to package directions.
Heat oil in a large skillet set over medium heat. Add ground beef and taco seasoning and sauté for 5 to 8 minutes, or until the beef starts to brown. Stir in the beans, tomato sauce and 2 tablespoons of water. Cook for 3 to 5 minutes, or until the beef is cooked through and the beans are heated through. Stir in lime juice and rice.
Serve rice filling in warm tortillas topped with cabbage, corn, avocado and cilantro.
For kid-friendly tacos, adjust the toppings to suit the child’s preferences. Top with salsa, guacamole, sour cream, shredded cheese, and/or shredded lettuce, as desired.
