Flexitarian Tacos

Ingredients

  • 1 bag Success® Brown Rice
  • 2 tbsp olive oil
  • 1/2 lb (8 oz) extra-lean ground beef
  • 2 tbsp taco seasoning
  • 1 cup canned black beans, drained and rinsed
  • 1/4 cup tomato sauce
  • 1 tbsp lime juice
  • 8 corn tortillas, warmed
  • 1 cup shredded red cabbage
  • 1 cup cooked corn
  • 1 ripe avocado, halved, pitted, peeled and sliced
  • 2 tbsp finely chopped fresh cilantro

Instructions

  • These fun beef, bean and Success® Brown Rice tacos are great for a weeknight taco dinner with friends or family!

    Step 1

  • Prepare rice according to package directions.

    Step 2

  • Heat oil in a large skillet set over medium heat. Add ground beef and taco seasoning and sauté for 5 to 8 minutes, or until the beef starts to brown. Stir in the beans, tomato sauce and 2 tablespoons of water. Cook for 3 to 5 minutes, or until the beef is cooked through and the beans are heated through. Stir in lime juice and rice.

    Step 3

  • Serve rice filling in warm tortillas topped with cabbage, corn, avocado and cilantro.

    Recipe Tip

    For kid-friendly tacos, adjust the toppings to suit the child’s preferences. Top with salsa, guacamole, sour cream, shredded cheese, and/or shredded lettuce, as desired.

If you’ve heard of pescatarian and vegetarian, you might be wondering where a flexitarian fits into the equation. The word is a combination of flexible and vegetarian, because this is someone who regularly eats a more plant-based diet, but incorporates meat into their diets occasionally.
