Ingredients

  • 1 bag Success Jasmine Rice (from the Family-Size 32 oz. box)
  • 1 lb shrimp (peeled & deveined, fresh or frozen)
  • 2 cups frozen peppers & onions mix
  • 2 tbsp red curry paste
  • 1 can (13.5 oz) coconut milk
  • 2 tbsp soy sauce
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp pepper
  • Fresh or dried parsley for garnish

Instructions

    1. Cook 1 bag Success Jasmine Rice according to package directions.
    2. In a skillet, sauté frozen peppers & onions until warmed through.
    3. Stir in curry paste + coconut milk, simmer 3–4 minutes.
    4. Season shrimp with salt/pepper/garlic powder
    5. Add shrimp + soy sauce. Cook until shrimp turn pink (3–4 minutes).
    6. Serve over fluffy jasmine rice + garnish with dried or fresh parsley
