Easy Slow Cooker Barbacoa and Rice

Ingredients

  • Olive oil for meat
  • 3 lbs. Beef chuck roast cut into about 6 chunks
  • 1 medium onion OR 1 tsp onion powder 1 T paprika
  • 1 T cumin
  • 1/2 T Oregano
  • 1.5 t salt Pepper to taste 3 bay leaves
  • 1/3 cup apple cider vinegar 2 T orange juice
  • 2 T lime juice
  • 1 T minced garlic
  • 2 Chipotle peppers
  • 1 cup chicken or beef broth
  • For the rice:
  • Success Boil-in-Bag Jasmine Rice 1/2 tsp of garlic salt
  • 1/2 T lime juice

Instructions

  • Step 1

    Sear meat in a pan until lightly browned in olive oil.

    Step 2

    Add meat to slow cooker

    Step 3

    Mix together all other ingredients except bay leaves in a small bowl and pour on top of meat

    Step 4

    Add bay leaves to the top and set to cook at low for 8 hours or high 4 hours or until meat is fork tender.

    Step 5

    When meat is ready remove from pot and shred with fork.

    Step 6

    Prepare the rice as directed

    Step 7

    When rice is done pour into a bowl, fluff with fork and add lime juice and garlic salt to taste.

    Step 8

    Plate and enjoy.
