Gremolata 101

Similar to pesto or chimichurri, a classic gremolata is made with fresh herbs, an acidic element and garlic. These are blended together into a punchy, flavorful, uncooked condiment. What sets gremolata apart is the use of citrus, which can be anything from lemon to grapefruit.
Our gremolata is made with Italian parsley, fresh mint leaves, the zest and juice from one lemon and chopped Kalamata olives. Traditionally served with veal, especially the classic dish osso buco, gremolata is best with meat and richer dishes as it adds bright, citrusy flavors.
