Caramelized Onion & Miso Rice Stuffing

  • 1 bag Success® Jasmine rice
  • 2 tbsp olive oil
  • 2 large onions, thinly sliced
  • 1/4 tsp salt
  • 1 tbsp white miso paste
  • 2 cloves garlic, minced
  • 1 tsp fresh thyme leaves
  • 1/2 cup vegetable broth
  • 1/4 cup fresh parsley, chopped (optional for garnish)

Ingredients

Instructions

    Step 1

    Prepare rice according to package directions.

    Step 2

    In a large pan, heat olive oil over medium-low. Add onions and salt. Cook for 25 minutes, stirring often, until deep golden brown and caramelized. Stir in garlic and thyme, cooking for 1 minute until fragrant.

    Step 3

    In a small bowl, whisk miso paste into the broth until dissolved. Add the rice to the skillet with onions. Pour in the miso-broth mixture and stir well to coat. Cook for 4 minutes until heated through and slightly sticky. Stir in fresh parsley before serving.
