Ingredients

  • For Peanut Dressing:
  • 2 tbsp peanut butter
  • 2 tbsp rice wine vinegar
  • 1 1/2 tbsp soy sauce
  • 1 tbsp fresh ginger root, chopped
  • 4 tsp sugar
  • 1 tbsp garlic clove, chopped
  • 1/2 cup coconut milk
  • 2 tbsp lime juice
  • 1/4 cup coconut
  • 1 hot chili pepper (optional)
  • For the Salad:
  • 2 cups cooked chicken breast halves, shredded
  • 1 cup bean sprouts
  • 1 cucumber, thinly sliced & halved
  • 1 carrot, thinly sliced
  • 1 can water chestnuts, drained

Instructions

  • Prepare rice according to package directions. Cool.

  • Combine all peanut dressing ingredients and mix in a blender or food processor.
