  • Prepare rice according to package directions using broth instead of water. Drain, reserving 1 cup broth; set aside.

  • Meanwhile, heat oil in large skillet set over medium heat; cook eggplant, onion, red pepper, celery and Cajun seasoning for 5 to 8 minutes or until softened. Stir in tomato paste; cook for 1 minute.

  • Stir in rice and reserved broth; bring to boil. Reduce heat to medium-low; cook for 8 to 10 minutes or until vegetables are tender and sauce is thickened. Sprinkle with parsley.

Substitute chopped mushrooms or canned beans for eggplant if desired.
