Ingredients

  • 1 bag Success® Brown Rice
  • 4 cups sodium-reduced vegetable broth
  • 2 tbsp olive oil
  • 1 small eggplant, chopped (2 to 3 cups)
  • 1 onion, diced
  • 1 small red pepper, diced
  • 1 stalk celery, diced
  • 2 tsp Cajun seasoning
  • 2 tbsp tomato paste
  • 2 tbsp fresh parsley, finely chopped

Instructions

  • Those who love a flavor-packed meal with a bit of heat know that a New Orleans Cajun rice is just the dish for that and this vegan option is no exception.

    Step 1

  • Prepare rice according to package directions using broth instead of water. Drain, reserving 1 cup broth; set aside.

    Step 2

  • Meanwhile, heat oil in large skillet set over medium heat; cook eggplant, onion, red pepper, celery and Cajun seasoning for 5 to 8 minutes or until softened. Stir in tomato paste; cook for 1 minute.

    Step 3

  • Stir in rice and reserved broth; bring to boil. Reduce heat to medium-low; cook for 8 to 10 minutes or until vegetables are tender and sauce is thickened. Sprinkle with parsley.
