Servings SERVES 4

  • 1 bag Success® White Rice
  • 2 eggs
  • 2 cups milk
  • 1/2 tsp vanilla extract
  • ¼ tsp ground cinnamon
  • ⅛ tsp ground nutmeg
  • ½ cup sugar
  • ¼ cup raisins
  • ½ cup miniature marshmallows (optional)

  • Rice pudding comes in many variations these days, but sometimes there’s nothing like this tried and true original recipe.

    Step 1

  • Prepare rice according to package directions. Crack eggs in a large mixing bowl and beat with a fork. Set aside.

    Step 2

  • In a saucepan, combine cooked rice, milk, vanilla, cinnamon, nutmeg, sugar, and raisins. Stir to blend. Put pan on stove burner and heat on medium until mixture comes to a gentle boil, about 3 minutes, stirring constantly. Reduce heat to low and continue to cook until raisins are plump, about 5 minutes, stir occasionally. Remove pan from heat.

    Step 3

  • Carefully, pour hot rice mixture into beaten eggs, a little at a time, stirring well after each addition so that eggs will not “scramble”. Keep adding rice mixture and stirring well until all liquid is added to eggs.

    Step 4

  • Return to stove on medium heat. Stirring constantly, bring to a slow simmer. Remove from heat and continue to stir one more minute.

    Step 5

  • Cool mixture for 10 minutes at room temperature. Garnish with mini-marshmallows, if desired. Pudding may be eaten warm or you may cover tightly with plastic wrap and chill in refrigerator for 1 hour before serving.

The Proof is in this Pudding

This recipe is perfect for those who like a sweet bite now and again, without going overboard on the sweetness. Made with Success® White Rice, this Vanilla Raisin Rice Pudding is perfect for breakfast, as a snack, or as dessert. The delicate notes of vanilla, cinnamon, and nutmeg, paired with chewy raisins and the creamy texture of the cooked rice make for an incredibly delightful treat any time of day.

While this recipe may take just a bit of finesse to get right, it is truly worth the effort. Most steps are quite simple. The step you’ll want to complete slowly and carefully is introducing the warm mixture into the beaten eggs. This is done a little at a time while continuously mixing well to prevent the eggs and the mixture from “scrambling.” Once you’ve completed this step and have a creamy, non-scrambled consistency, you return the mixture to heat for a short time longer and… voilá! You’ve prepared your next favorite rice pudding recipe.

Now you must decide: will you enjoy this as a sweet, warm treat topped with marshmallows, or as a chilled snack with a light dusting of cinnamon? Decisions, decisions…
