  • 1 bag Success® Quinoa
  • 1 1/2 cup shredded cabbage mix
  • 1/2 cup cilantro, rough chopped
  • 2 tbsp fresh mint, rough chopped
  • 1/2 cup English cucumber, thinly sliced
  • 1/2 cup carrots, shredded
  • 1/2 cup red bell peppers, thinly sliced
  • 1 tbsp soy sauce
  • 1 tsp fish sauce
  • 1 tsp sesame oil
  • 1 tsp honey
  • 1 tsp white vinegar
  • 1/4 cup peanuts, rough chopped


As a side dish or a light main course, this thai peanut salad really delivers! With its nutty, pungent dressing and layers of flavor, it’s a 20-minute salad with universal appeal.

  • Step 1: Prepare quinoa according to package directions. Cool.

  •  Step 2:  Mix cooled quinoa with cabbage, cilantro, mint, cucumber, carrots, and bell peppers.

  •  Step 3: In a small bowl whisk together soy sauce, fish sauce, sesame oil, honey, and vinegar.

  •  Step 4: Add dressing and toss to combine. Top with peanuts.

For some heat, add chopped fresh red chili peppers to the salad.
