This simple and delicious recipe made with Success® White Rice is an award-winning classic from the 2009 Restaurant Recipe Challenge. This rice bowl has got it all, get your daily dose of grains, proteins and veggies in one bite.
Prepare rice according to package directions.
Heat oil in large nonstick skillet over medium-high heat. Add chicken and sauté for 5 minutes, turning occasionally. Add poblano pepper, garlic, onions, and bell pepper; cook for 5 minutes. Season with salt.
Remove from heat. Pour corn and black beans into two separate microwave-safe bowls. Microwave each on HIGH for 2 minutes or until heated through.
In four bowls, layer ¼ rice, ¼ chicken mixture, ¼ corn, and ¼ black beans. Top with cheese and salsa.
