Simple Breakfast Burrito

Ingredients

  • 1 bag Success® White Rice
  • 1/2 cup breakfast potatoes, frozen
  • 2 tbsp vegetable oil, divided
  • 5 eggs, beaten
  • 1/2 cup breakfast sausage, casing removed
  • 1/2 cup canned black beans, drained
  • 2 burrito-size flour tortillas
  • 1/2 cup spinach
  • 1/2 cup cheddar cheese, shredded
  • 1 avocado, pitted and sliced

Instructions

  • Step 1: Prepare rice according to package directions.

  • Step 2:  Prepare breakfast potatoes according to package directions.

  • Step 3: In a medium pan, heat 1 tablespoon of oil over medium-high heat. Add eggs and scramble for 2 minutes. Set it aside.

  • Step 4: Add remaining oil to pan and add sausage. Cook for 5 minutes, making sure to break up the meat clumps. Add in black beans and cook for 2 minutes.

  • Step 5: Heat tortillas on a griddle or in a pan to desired warmth.

  • Step 6: Divide rice, potatoes, eggs, sausage, beans, spinach, cheese and avocado evenly between tortillas.
