Ingredients

  • 1 bag Success® Pearl Couscous
  • 1 lb sea scallops (about 12 large)
  • 1 tbsp salt, divided
  • 1 tbsp black pepper, divided
  • 1 tbsp canola oil
  • 1/2 stick unsalted butter
  • 2 cloves garlic, minced
  • Juice of 1 lemon
  • 1 tbsp parsley, chopped
  • 1 tbsp chives, chopped
  • lemon wedges, for serving

Instructions

    Step 1

    Prepare pearl couscous according to package directions.

    Step 2

    Meanwhile, pat scallops dry with paper towels. Season both sides with salt and pepper.

    Step 3

    Heat oil in a large skillet over medium-high heat until just smoking.

    Step 4

    Add scallops in a single layer without crowding. Sear without moving them for 2 minutes per side, or until a golden crust forms. Flip and cook another 2 minutes. Set aside.

    Step 5

    In a small saucepan or skillet over medium heat, melt the butter.

    Step 6

    Add the garlic and cook for 1 minute, until fragrant. Stir in lemon juice, and simmer for 1 more minute to combine. Season with remaining salt and pepper, to taste.

    Step 7

    Place scallops on top of the pearl couscous and top with sauce. Garnish with parsley and lemon wedges.
