Sauerkraut, Sausage, and Rice

Ingredients

  • 1 bag Success® Basmati rice
  • 2 chicken bouillon cubes
  • 3 tbsp olive oil, divided
  • 1/2 lb sausage, sliced
  • 1 garlic clove
  • 1 cup yellow onion, chopped
  • 1/2 cup carrots, cut into half moons
  • 1/2 tsp oregano
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 cups sauerkraut
  • 1/2 tbsp celery seed

Instructions

  • Step 1: Prepare rice according to package directions. Add bouillon cubes to water.

  • Step 2: In a large skillet, heat half of oil over medium heat. Add sausage and cook for 3 minutes or until browned. Cook in batches if needed. Transfer to a plate and set aside.

  • Step 3: Heat the remaining olive oil on medium-high heat. Add garlic and cook for 30 seconds. Add onions, carrots, oregano, salt and pepper. Cook for 5 minutes or until vegetables are tender.

  • Step 4: Stir in sauerkraut and celery seeds and cook for 1 minute.

  • Step 5: Add cooked rice and sausage and fully combine all ingredients.
