Ingredients

  • 1 bag Success® White Rice
  • 1 tbsp butter
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, diced
  • 1 can red kidney beans, rinsed and drained
  • 12 oz andouille sausage, sliced
  • 1 cup water
  • 1 bay leaf
  • 1/2 tbsp Cajun seasoning
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions

  • Step 1: Prepare rice according to package directions.

  • Step 2: In a medium saucepan, melt the butter over medium heat. Add the onion, garlic, and bell pepper, and cook until softened and fragrant.

  • Step 3: Combine the kidney beans, sausage, water, bay leaf, Cajun seasoning, salt, and pepper into the saucepan and bring to a boil. Reduce heat to low and simmer for 10 minutes.

  • Step 4: Stir in rice and enjoy.
