Paired with roast chicken, beef or pork, this simple couscous side dish easily completes any meal.
Step 1: In saucepan, sauté onion in oil until tender. Stir in the couscous; cook and stir until slightly toasted. Cover with the broth; bring to a boil.
Step 2: Reduce heat and simmer about 10 minutes or until liquid is absorbed. Stir in the cranberries and almonds.
Step 3: Remove from heat and let stand, covered, for 10 minutes.
Step 4: Fluff with fork. Season with salt and pepper if desired. Garnish with parsley.
