Jumpin’ Jambalaya

Servings SERVES 4

Ingredients

  • 2 bags Success® White Rice or Success® Brown Rice
  • 1/2 cup frozen vegetable blend (bell peppers, onions
  • , celery)
  • , thawed
  • 1 can (14 1/2 oz.) Cajun-style stewed tomatoes
  • 1/2 cup cooked shrimp
  • 1/2 cup chicken, cooked and cubed
  • 1/2 tsp Cajun seasoning
  • 1 cup frozen green peas, thawed

Instructions

  • Prepare rice according to package directions.

  • In a medium skillet, over medium high heat, combine vegetable blend, tomatoes, shrimp, chicken, and seasoning. Cook for 10 minutes. Fold in cooked rice and peas. Heat for an additional 5 minutes and serve.
