Ingredients

  • 2 bags Success® White Rice
  • 1 tbsp canola oil
  • 1 can (14.5 oz) Cajun-style stewed tomatoes
  • 1/2 cup cubed, cooked chicken
  • 1/2 cup cooked shrimp, peeled and deveined
  • 1/2 cup frozen vegetable blend (bell peppers, onions, celery), thawed
  • 1/2 tsp Cajun seasoning
  • 1 cup frozen green peas, thawed

Instructions

    Step 1

  • Prepare rice according to package directions.

    Step 2

  • Heat oil in a large skillet over medium high heat. Add tomatoes, chicken, shrimp, vegetables and Cajun seasoning. Cook for 8-10 minutes, stirring frequently, until combined and heated through.

    Step 3

  • Fold in rice and peas and mix to combine. Cook for an additional 2-3 minutes.
