Ingredients

  • 1 bag Success® White Rice
  • 2 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 lb andouille sausage, sliced
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 2 cups shrimp, peeled and deveined
  • 1 tsp Cajun seasoning
  • Fresh parsley, chopped (for garnish)

Instructions

  • Step 1 

    Prepare rice according to package directions. Replace water with chicken broth and juices for the tomatoes. 

    Step 2 

    Heat a large skillet over medium heat, add the sausage. Cook for about 7 minutes until browned. 

    Step 3 

    Add the onion, bell pepper, and garlic to the skillet. Cook for another 3 minutes until the vegetables are softened. Add shrimp and cook an additional 5 minutes. 

    Step 4

    Stir in the rice, tomatoes, and Cajun seasoning. Garnish with parsley.
