The winning combo of honey, lemon, Dijon and Parmesan cheese take this simple weeknight dinner into undeniably sophisticated territory.
Step 1: Prepare couscous according to package directions. Preheat grill to 400° F.
Step 2: Coat chicken with 2 tbsp olive oil and season with salt and pepper. Grease grill to prevent sticking. Cook chicken for 7 minutes per side or until internal temperature is 165° F. Slice chicken into strips.
Step 3: Into a gallon size bag, place asparagus and 2 tablespoons of olive oil. Toss, then season with 1 tablespoon each of salt and pepper. Place asparagus on the grill for 5 minutes, rotating throughout to get an even char.
Step 4: In a small bowl, add remaining olive oil, lemon juice, honey, and mustard. Whisk together until emulsified.
Step 5: Add vinaigrette to the couscous and combine. Place sliced chicken on top of the couscous. Place the asparagus on the side and top with Parmesan. Serve and enjoy.
