Step 1
Prepare pearl couscous according to package directions. Replace water with vegetable broth.

In a blender, combine the spinach, parsley, Greek yogurt, lemon juice, salt, and pepper. Blend until smooth and creamy. Adjust seasoning if needed.
Step 3
In a large bowl, combine the pearl couscous, green onions, and the green goddess dressing. Mix well to coat the couscous evenly.
Step 4
Divide the salad among four plates or bowls. Pair with microgreens and garnish with cherry tomatoes, avocado and feta, if using.
