Ingredients

  • 1 bag Success® Jasmine Rice
  • 4 cups chicken broth
  • 1 tbsp butter
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can red kidney beans, rinsed and drained
  • 1 can coconut milk
  • 2 bay leaves

Instructions

  • Step 1: Prepare rice according to package directions replacing water with chicken broth.

  • Step 2: In a medium pan, melt the butter over medium heat. Add the onion and garlic and cook for 1 minute.

  • Step 3: Add red beans, coconut milk, and bay leaves to the pan, and bring to a boil. Reduce heat and simmer for 5 minutes. Add cooked rice and cook for another 5 minutes. 

  • Step 4: Remove from heat. Serve and enjoy.
