Ingredients

  • 1 bag Success® Jasmine rice 
  • 1/4 cup rice vinegar 
  • 2 tbsp sugar 
  • 1 tsp salt 
  • 1 lb shrimp, cooked and chopped 
  • 1/2 cup Japanese mayonnaise  
  • 1 tbsp sriracha 
  • 4 tbsp soy sauce, divided 
  • 1 tsp sesame oil 
  • 1/4 cup avocado, finely diced 
  • 1/4 cup cucumber, finely diced 
  • 1 cup nori, shredded 
  • 1/2 cup panko breadcrumbs 
  • 2 tbsp butter, melted 
  • 1 tbsp sesame seeds 
  • 1/4 cup pickled ginger (optional) 
  • 1/2 tbsp wasabi (optional) 

Instructions

  • Step 1: Prepare rice according to package directions.

  • Step 2: In a small saucepan, heat rice vinegar, sugar, and salt over low heat until dissolved. Mix this mixture into the cooked rice gently. Allow the rice to cool slightly.

  • Step 3: In a mixing bowl, combine the shrimp, mayonnaise, sriracha, soy sauce, sesame oil, cucumber, and avocado. Mix until well combined.

  • Step 4: Preheat your oven to 350°F. In a lightly greased baking dish (about 9×13 inches), spread the prepared rice evenly across the bottom. Layer the shrimp mixture over the rice, spreading it evenly.

  • Step 5: In a separate bowl, mix the nori, breadcrumbs, melted butter and sesame seeds. Sprinkle this mixture over the top of the filling.

  • Step 6: Bake for about 25 minutes, or until the top is golden and crispy.

  • Step 7: Remove it from the oven and let it cool for a few minutes. Serve warm with soy sauce, pickled ginger, and wasabi on the side.
