Successful Beef Stroganoff

Ingredients

  • 1 bag Success® White rice
  • 3/4 lb round steak cut in 1/4-inch strips
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp oil
  • 3 tbsp butter
  • 1/2 cup onions, sliced
  • 3/4 cups mushrooms, sliced
  • 2 tbsp all-purpose flour
  • 2 cups beef broth
  • 3/4 cup sour cream
  • 1 tbsp Dijon mustard

Instructions

  • Step 1 

    Prepare rice according to package directions.

  • Step 2: Season steak with salt and pepper.

  • Step 3: In a large skillet, heat oil over high heat. Brown steak for 1 minute turning once halfway through. Cook in batches if needed. Set aside.

  • Step 4: Reduce heat to medium and melt butter. Cook onions for 1 minute. Add mushrooms and cook until golden brown.

  • Step 5: Add flour and stir. Cook for 1 minute, then add half of the broth. Stir until completely combined, then add remaining broth.

  • Step 6: Stir in sour cream and mustard. Bring to a simmer and reduce heat. Cook for 5 minutes or until sauce thickens. Add beef and cook for 1 more minute.

  • Step 7: Serve over rice.

  • Recipe Tip: Serve with parsley as garnish.
