Step 1
Preheat oven to 400 F.
Step 2
Core, half and deseed peppers, dice onion, mince or grate garlic.
Step 3
Lightly prepare baking sheet with olive oil and roast peppers face side down for ~10 minutes (you don’t want them fully cooked as they will continue cooking with filling).
Step 4
Sautée onions over medium heat until translucent (~4-5 minutes) and then add garlic and cook for ~1 minute.
Step 5
Add ground turkey to pan with onions and garlic, breaking apart, and cooking until browned (~5-7 minutes).
Step 6
Once the turkey is browned add fresh parsley, basil, oregano, chili flakes, salt and pepper and combine.
Step 7
Add marinara sauce and combine, stirring until turkey is fully cooked.
Step 8
Add @successrice Boil-in-Bag Pearl Couscous and combine with turkey mixture, and then add Parmesan.
Step 9
Fill peppers with the filling mixture to your liking and top with mozzarella.
Step 10
Bake for another ~10 minutes until cheese is melted and beginning to crisp.
