Step 1
Prepare rice according to package directions.

In the blender, add the rice, milk, sugar, vanilla extract, 1/2 tsp ground cinnamon, and salt. Blend until smooth.
Step 3
In a separate blender or the same blender after rinsing, combine the sliced strawberries and blend until smooth. Add a little more water if needed to help blend.
Step 4
In a large pitcher, combine the horchata with the strawberry puree. Stir well to combine.
Step 5
Chill the strawberry horchata in the refrigerator for at least 30 minutes. Serve over ice and sprinkle with remaining ground cinnamon.
