Step 1: Preheat oven to 400ºF. Coat a 2-quart baking dish with nonstick cooking spray and set aside.
Step 2: Prepare quinoa according to package directions. Add green beans to water during the last 5 minutes of cooking. Drain and set aside.
Step 3: Meanwhile, heat oil in a large skillet set over medium-high heat. Sauté mushrooms, salt and pepper for 5 to 8 minutes, or until tender.
Step 4: Add quinoa, green beans, and soup to skillet. Stir to combine. Spoon into baking dish and smooth top. Sprinkle with Parmesan cheese.
Step 5: Bake for 25 to 30 minutes, or until golden brown and bubbling. Top with onions for the last 5 minutes. Let stand for 5 minutes. Sprinkle with chives.
