Quinoa Green Bean Casserole

Ingredients

  • Nonstick cooking spray
  • 1 bag Success® Quinoa
  • 2 cups French-style green beans
  • 2 tbsp olive oil
  • 1 lb mushrooms, sliced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1/2 cup grated Parmesan cheese
  • 1 1/2 cups crispy fried onions
  • 2 tbsp fresh chives, finely chopped

Instructions

  • Step 1: Preheat oven to 400ºF. Coat a 2-quart baking dish with nonstick cooking spray and set aside.

  • Step 2: Prepare quinoa according to package directions. Add green beans to water during the last 5 minutes of cooking. Drain and set aside.

  • Step 3: Meanwhile, heat oil in a large skillet set over medium-high heat. Sauté mushrooms, salt and pepper for 5 to 8 minutes, or until tender.

  • Step 4: Add quinoa, green beans, and soup to skillet. Stir to combine. Spoon into baking dish and smooth top. Sprinkle with Parmesan cheese.

  • Step 5: Bake for 25 to 30 minutes, or until golden brown and bubbling. Top with onions for the last 5 minutes. Let stand for 5 minutes. Sprinkle with chives.

  • Recipe Tip: Substitute butter for olive oil, if desired.
