Step 1
Heat a deep, heavy bottomed pan over medium-high heat. Cut open the quinoa bag. Add 2 tbsp of quinoa to the pan at a time. Stir constantly until they begin to puff and pop. Should take about 20 seconds. Place in a bowl and repeat until all of the quinoa is used.
Step 2
In a heatproof bowl, melt chocolate and coconut oil in the microwave in 30-second intervals, stirring until smooth.
Step 3
Stir puffed quinoa into the melted chocolate until fully coated.
Step 4
Take a spoonful and place on a parchment lined pan in clusters. Refrigerate for 30 minutes until firm.
