Ingredients

  • 1 bag Success® Pearl Couscous
  • 1 cup cherry tomatoes, quartered
  • 1/2 cup chickpeas
  • 1 cup fresh mozzarella balls, halved
  • 1/2 cup fresh basil leaves, chopped
  • 1/4 cup arugula
  • 1/2 cup pesto sauce
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 cup parmesan cheese, grated

Instructions

    Step 1

    Prepare pearl couscous according to package directions.

    Step 2

    In a large bowl, combine pearl couscous, tomatoes, chickpeas, mozzarella balls, and basil. Add pesto and toss ensuring everything is evenly coated.

    Season with salt and pepper, sprinkle parmesan on top. Serve immediately on bed of arugula or refrigerate for 30 minutes.
