Pearl Couscous and Chickpea Salad

Ingredients

  • 1 bag Success® Pearl Couscous
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup fresh parsley, chopped
  • 1 tbsp za’atar
  • 2 tbsp olive oil
  • 1 tbsp lemon juice, freshly squeezed
  • 1/2 tsp salt
  • 1/4 tsp pepper

Instructions

  • Step 1 

    Prepare pearl couscous according to package directions. 

    Step 2 

    In a large bowl, combine the couscous, chickpeas, cherry tomatoes, cucumber, parsley, and za’atar. 

    Step 3 

    Drizzle with olive oil and lemon juice. Season with salt and pepper to taste. Toss together until well combined. 

    Step 4 

    Can be served warmed or at room temperature.
