Traditionally served with mango, coconut-scented sticky rice is equally delicious topped with ripe peach slices and a flurry of toasted coconut flakes.
Step 1
Prepare rice according to package directions.
Step 2
In a saucepan, heat coconut milk, sugar and salt over medium heat, stirring until sugar dissolves (do not boil) for about 10 minutes. Remove from heat.
Step 3
Fluff the rice and gently stir into the coconut sauce. Cover and let it sit for 15 minutes to absorb.
Step 4
Spoon the rice into bowls. Top with peach slices. Sprinkle with toasted coconut, if using and garnish with mint.
