Pastalaya (Pasta Jambalaya)

Ingredients

  • 1 bag Success® Pearl Couscous
  • 1 lb andouille sausage, sliced
  • 1 cup green bell pepper, chopped
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp Cajun seasoning
  • Fresh parsley, chopped (for garnish)

Instructions

  • Step 1 

    Prepare pearl couscous according to package directions. 

    Step 2 

    In another pot, add the sausage and cook over medium heat for 5 minutes until browned. Add the bell pepper, onion, and garlic; sauté for an additional 3 minutes until the vegetables are softened. 

    Step 3 

    Stir in the tomatoes with juices, chicken broth, and Cajun seasoning. Bring the mixture to a simmer. 

    Step 4 

    Add the pasta to the pot. Stir well to combine and cook for another 2 minutes. Garnish with parsley.
