Mediterranean Grilled Chicken with Pearl Couscous Greek Salad

Ingredients

  • For the Chicken:
  • 1 lb boneless, skinless chicken breasts (or thighs)
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp dried oregano
  • Salt and black pepper to taste
  • For the Roasted Potatoes:
  • 3 medium potatoes, diced
  • 1 ½ tbsp olive oil
  • ½ tsp garlic powder
  • ½ tsp chili flakes (optional)
  • Salt and pepper to taste
  • 1 tbsp chopped parsley (for garnish)
  • For the Pearl Couscous Greek Salad:
  • 1 bag Success® Boil-in-Bag Pearl Couscous
  • 2 cups chopped lettuce (romaine or mixed greens)
  • ½ cup shredded purple cabbage
  • ¼ cup shredded carrots
  • ½ cup diced cucumber
  • ¼ cup diced red onion
  • ¼ cup diced bell pepper (any color)
  • ¼ cup sliced radish
  • ¼ cup crumbled feta cheese
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar (or lemon juice)
  • ½ tsp dried oregano
  • Salt and pepper to taste

Instructions

  • Step 1: Cook the Couscous

    Prepare one bag of Success® Pearl Couscous according to package directions (boil for 7–10 minutes). Drain, fluff with a fork, and set aside to cool slightly.

    Step 2: Marinate the Chicken

    In a bowl, whisk together olive oil, lemon juice, garlic powder, paprika, oregano, salt, and pepper. Add chicken and coat evenly. Let marinate for at least 10 minutes (or up to 1 hour for extra flavor).

    Step 3: Grill the Chicken:

    Heat a grill pan or outdoor grill over medium-high heat. Cook chicken for 5–6 minutes per side, or until fully cooked and nicely charred. Remove and let rest before slicing.

    Step 4: Roast the Potatoes
    Preheat oven to 425°F (220°C). Toss diced potatoes with olive oil, garlic powder, chili flakes, salt, and pepper. Spread on a baking sheet and roast for 20–25 minutes, flipping halfway through until golden brown. Garnish with parsley.

    Step 5: Assemble the Greek Salad

    In a large bowl, combine lettuce, cabbage, carrots, cucumber, onion, bell pepper, and radish. Add the cooked Success® Pearl Couscous and feta cheese. Drizzle with olive oil, red wine vinegar, oregano, salt, and pepper. Toss until evenly coated.

    Step 6: Serve

    Plate the couscous Greek salad alongside grilled chicken and roasted potatoes for a colorful, balanced, and satisfying meal.
