Kefir & Blackberry Compote Rice Pudding

Ingredients

  • 1 bag Success® White Rice
  • 2 cups kefir
  • 1/2 cup sugar
  • 1/2 tsp vanilla extract
  • 1 cup blackberries
  • 3 tbsp honey
  • 1 tbsp lemon juice
  • 1 tbsp water
  • 2 tbsp hazelnuts, crushed (optional)

Instructions

  • Step 1: Prepare rice according to package directions.

  • Step 2: Combine rice, kefir, sugar, vanilla in a medium saucepan set over medium heat. Bring to a gentle boil, stirring constantly. Reduce heat to low and continue to cook, about 5 minutes. Remove pan from heat. Cool rice mixture for 10 minutes at room temperature.

  • Step 3: Meanwhile, heat a small saucepan over medium heat. Add blackberries, honey, lemon juice and water. Bring compote to a simmer, stir, and reduce heat to low. Simmer for 10 minutes, stirring occasionally.

  • Step 4: Divide rice pudding among 4 serving dishes. Top rice with compote and hazelnuts.

  • Recipe Tip: Serve this rice pudding warm, or if you prefer, cover it tightly with plastic wrap and chill it in the refrigerator for 2 hours before serving.
