Ingredients

  • 1 bag Success® Brown rice
  • 2 tbsp coconut oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 4 cups chicken broth
  • 1 can (13.5 oz) coconut milk
  • 2 cups frozen mixed vegetables
  • 2 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tsp salt
  • 1 tsp pepper
  • Fresh cilantro, for garnish

  • Sometimes, all it takes is a dash of this and a drop of that to create a meal that makes everyone at the table swoon! In this savory weeknight soup, pantry staples combine to amp up the flavor of a classic. 

    Step 1: Prepare rice according to package directions.

  • Step 2: In a large pot, heat coconut oil over medium heat. Add onion, garlic, and ginger. Sauté for 5 minutes or until the onion is translucent.

  • Step 3: Add the chicken pieces to the pot and cook for 5 minutes or until they are browned on all sides. Pour in the chicken broth and coconut milk. Stir well to combine.

  • Step 4: Add rice and vegetables to the pot. Bring the soup to a boil, then reduce the heat and let it simmer for about 20 minutes, or until the chicken is cooked through and the vegetables are tender.

  • Step 5: Stir in soy sauce, lime juice, salt, and pepper. Adjust the seasoning according to your taste.
