Garlic Butter Herb-Jasmine Rice Bowl With Roasted Veggies

Ingredients

  • 2 bags of family size 32oz Success Boil-in-Bag Jasmine Rice
  • 2 cups favorite veggies (zucchini, bell peppers, carrots, ect.)
  • 3 tbsp garlic butter
  • 1 tbsp olive oil
  • 1 tsp lemon zest
  • 2 tbsp fresh parsley, chopped
  • Salt & pepper, to taste
  • Grated Parmesan cheese to top
  • (Optional) 1 cooked rotisserie chicken chopped/sliced

Ingredients

  • 2 bags of family size 32oz Success Boil-in-Bag Jasmine Rice
  • 2 cups favorite veggies (zucchini, bell peppers, carrots, ect.)
  • 3 tbsp garlic butter
  • 1 tbsp olive oil
  • 1 tsp lemon zest
  • 2 tbsp fresh parsley, chopped
  • Salt & pepper, to taste
  • Grated Parmesan cheese to top
  • (Optional) 1 cooked rotisserie chicken chopped/sliced

Instructions

    1. Preheat oven to 425°F.
    2. Prep the Veggies: Chop into bite size pieces, toss with olive oil, add salt & pepper.  Roast for 20-25 mins.
    3. Cook the Rice: Boil water according to package instructions and cook 2 bags of Success Jasmine Rice.  
    4. Flavor the Rice:  After removing rice from pot, pour directly into a large bowl and fluff.  While warm, stir in garlic butter, lemon zest, and parsley until well coated. 
    5. Assemble the Bowls: Add rice, veggies, and chicken if desired, then top with a squeeze of lemon, and sprinkle with Parmesan.

    ****For extra flavor you can add a dollop of hummus or tzatziki, sprinkle toasted pine nuts/slivered almonds for a delicious crunch!
