Ingredients

  • 1 bag Success® Brown Rice
  • 2 tbsp cashew butter
  • 2 tbsp water
  • 1 tbsp soy sauce
  • 1 tbsp sriracha sauce
  • 1/2 tsp garlic, minced
  • 1 tbsp honey
  • 1 tsp sesame oil
  • ½ tsp rice vinegar
  • 1 cup spring mix
  • 1 chicken breast, grilled, blackened, and diced
  • 1/2 cup red cabbage, shredded
  • 1/2 cup carrots, sliced
  • 1/2 cup cucumber, chopped
  • 1/2 cup store bought crispy chickpeas
  • 1/4 cup cilantro leaves
  • 2 tbsp roasted almonds, chopped
  • 1 lime wedge

Instructions

  • Step 1: Prepare rice according to package directions.

  • Step 2: In a small bowl whisk together cashew butter, water, soy sauce, sriracha sauce, garlic, honey, sesame oil and vinegar.

  • Step 3: To build the bowl, divide the ingredients between two bowls. Use the rice as the base followed by the spring mix. Put the chicken, cabbage, cilantro, cucumber, carrots, almonds, and chickpeas in their own section of the bowl.

  •  Step 4: Drizzle dressing on top and add lime wedge, for garnish.
