Crispy Rice Cakes with Peach and Prosciutto

Ingredients

  • 1 bag Success® Basmati Rice
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tbsp olive oil
  • 6 slices of prosciutto
  • 1 ripe peach, pitted and sliced
  • fresh basil, cut into ribbons
  • balsamic glaze (optional)

Instructions

  • Elegant yet simple to prepare, these crispy rice cakes are perfect for barbecues, potlucks, and other warm-weather get-togethers. 

    Step 1

    Prepare rice according to package directions. Allow it to cool.

    Step 2

    In a large bowl, combine rice with salt and pepper. Take a portion of rice and shape it into small, flat cakes (about 1/2 inch thick).

    Step 3

    In a medium nonstick pan, heat olive oil over medium heat. Place cakes in the pan and cook for 3 minutes per side, or until golden brown and crispy. Repeat until all of the rice is used.

    Step 4

    On each rice cake, lay a slice of prosciutto followed by a peach slice. Add a few pieces of basil, and drizzle with balsamic glaze, if using.
