Instructions

  • A complete meal in one bowl, this simple soup delivers veggies, chicken, and bouncy pearl couscous in every warming bite. 

    Step 1

    Prepare pearl couscous according to package directions.

    Step 2

    In a large pot, heat butter over medium heat. Add onion, carrots, and celery. Cook for 5 minutes, until softened. Stir in garlic and cook 1 more minute.

    Step 3

    Slowly stir in chicken broth, then add Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat to simmer for 10 minutes.

    Step 4

    Stir in the chicken, milk, and pearl couscous. Simmer another 5 minutes, until hot. Garnish with parsley.

Recipe Tips

If you prefer your soup creamier, stir in about a tablespoon of the heavy cream at the end, just before serving.
