For the most intense flavor, marinate your chicken the night before you plan to make this meal. Then, a few minutes of boiling, sautéing, chopping and plating is all that will stand between you and a stellar supper.
Step 1
Prepare rice according to package directions.

In a large bowl, combine chicken thighs, olive oil, garlic, cumin, and paprika. Toss to coat. Let marinate for at least 20 minutes. Best result leave marinating overnight in the refrigerator.
Step 3
Heat a large pan over medium-high. Cook chicken thighs 5 minutes per side until fully cooked and slightly charred. Rest for 5 minutes, then slice.
Step 4
Divide rice between 4 bowls. Top with chicken, cucumber, tomato, and a dollop of Greek yogurt.
