Ingredients

  • 2 bags Success® White Rice
  • 6 yellow squash, thinly sliced
  • 2 tbsp butter, melted or olive oil
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1/2 tbsp salt
  • 1/2 tbsp pepper
  • 2 cups cheese sauce
  • 2 cups shredded sharp cheddar
  • 1 cup fried onions

Instructions

  • A side that tends to steal the spotlight, this warm, creamy casserole is also a cinch to make! Simply pop it into the oven, then get on with your day.

  • Step 1: Preheat oven to 400F. Prepare rice according to package directions.

  • Step 2: In a large bowl, add squash and butter. Toss until all squash is fully coated. Sprinkle the garlic powder, onion powder, salt, and pepper over the squash.

  •  Step 3: In a casserole dish, layer the rice, followed by the squash, cheese sauce, then shredded cheese. Repeat once more.

  • Step 4: Cover with aluminum foil and bake for 35 minutes. Add fried onions, then cook for 5 more minutes.
