Ingredients

  • 1 cup brown sugar (light or dark)
  • 1/2 cup bourbon
  • 2 tbsp butter
  • 1 tsp apple cider vinegar
  • 1/2 tsp salt
  • 1/4 tsp cayenne
  • 2 medium sweet potatoes, cubed
  • 2 cups fresh spinach
  • 1 avocado, sliced

Instructions

    Step 1

    Preheat oven to 400 °F. Prepare quinoa according to package directions.

    Step 2

    In a small saucepan, combine brown sugar and bourbon. Bring to a simmer over medium heat, stirring often until the sugar dissolves. Stir in butter, vinegar, salt, and cayenne. Let it simmer gently for 8 minutes, until slightly thickened.

    Step 3
