Whip up a batch of these energizing fruit and quinoa bars and brighten up a week’s worth of mornings.
Step 1
Preheat oven to 350°F. Line an 8×8-inch baking pan with parchment paper. Prepare quinoa according to package directions. Allow it to cool completely.
Step 2
Heat a deep, heavy bottomed pan over medium-high heat. Cut open the quinoa bag. Add 2 tbsp of quinoa to the pan at a time. Stir constantly until they begin to puff and pop. Should take about 20 seconds. Place in a bowl and repeat until all of the quinoa is used.
Step 3
In a large bowl, mix the quinoa, oats, cinnamon, and salt.
Step 4
In another bowl, whisk together the honey, banana, egg, and vanilla. Pour into the dry mixture and stir until well combined. Fold in the blueberries.
Step 5
Spread the mixture evenly in the prepared pan. Bake for 25 minutes, or until firm and lightly golden around the edges. Cool completely before slicing into bars.
